Ground Turkey Sweet Potato Skillet
This meal is in my top-10 weeknight go-to’s. I’ve been making variations of it for a few years, but tonight was the first time I subbed-in Cajun seasoning for taco seasoning. (Wild, right?)
It was a good swap, but I’m still partial to a version of this with taco seasoning. I mostly swapped out of laziness, because I use homemade taco seasoning so often that I end up needing to make it again and again and again. *End humble brag* I was too hungry to be bothered and because I already had it on-hand, Cajun seasoning it was.
Seasoning aside, here’s what I love about it:
It’s a one pan meal
Sweet potatoes are the potato's healthier cousin (we get it, Tammy, you’re doing very well)
You can add as many veggies as you want to make it more filling
Use different seasoning combos to make it a different dish
Fried egg on stop = adulting
Scrambled eggs mixed in = impressive brunch
One serving is about 10 WW points

Turkey Sweet Potato Skillet | Serves 4
Ingredients
1 tbsp. olive oil
1lb. ground turkey
1 onion, chopped
1 jalapeño, chopped
2 garlic cloves, minced
2 sweet potatoes, cut into 1/2 – 1 inch cubes
1-2 tbsp. Cajun seasoning (I used BA’s recipe)
Optional: fried egg to top each bowl
Instructions
Do your prep: Chop the sweet potatoes and veggies, and season the ground turkey.
Heat olive oil in a large skillet over medium heat – but for the love of God, do it when you’re ready to pay attention to it. There’s nothing worse than burnt oil.
Once the pan is hot, add sweet potatoes. These are tricky little buggers and need time to cook until soft, at least 10-15 minutes.
Sometimes I like to cover the skillet to speed up the process and keep the sweet potaters moist. No lid? A pizza pan will do.
When the sweet potatoes are soft, add onions, jalapeños, garlic, and any other veggies. If desired, add a dash of seasoning to the veggies. Cook until soft, about 2-3 minutes.
Add the seasoned ground turkey and cook until browned, another 5 minutes or so.
When the skillet is done, turn down heat to low to keep warm. Fry an egg in a separate pan to top on each bowl.
Notes
In addition to the onion and jalapeño, any other veggies you have lingering in the crisper drawer can work. Peppers, mushrooms, zucchini – just live your best veggie life.
If you’re feeling indulgent and not worried about calories, go nuts and use ground beef. For a Mexican twist, try taco seasoning or Chorizo. No additional spices needed for Chorizo – that’s overkill. ;)
Oh, and if you really don’t care about calories or are just going to run it off tomorrow – PILE ON THE CHEESE PLS. You (mostly) won’t regert it.
